Mullen’s, Palestine’s beloved salad dressing shop for 75 years, is undergoing many changes recently. After John D. Mullen opened his shop on Main St of Palestine in 1948, it has seen 3 new owners since. Roy Shaner, who was originally Mullen’s general manager and dear friend, took over after the death of John Mullen. After that was Roy’s son, Jeff Shaner. And now, following the recent passing of Jeff, is Penny Shaw.

Penny Shaw, along with her husband David Shaw, are the owners of Flying S Inc. Penny is originally from Australia, but was brought here by her husband David who is a Palestine native. “I am honored to continue the legacy passed down from John D. Mullen, Roy Shaner, and Jeff Shaner,” Penny said when explaining her excitement to get started at Mullen’s.

Penny and David have already started their journey to make Mullen’s bigger and better with the new renovations of the store front. Within just a few short weeks, they’ve already started on the makeover. From a street view, you can see its fresh coat of paint and new string lights. Despite all of the changes happening around the shop, the authentic and genuine feel of the place and their dressing menu will forever stay the same. You can ensure this is just the start for new beginnings at the shop, and there is definitely more in store for Mullen’s in the near future.
